Ginger, Honey And Bourbon Veal Brisket

Ingredients
- 5-pound (2.26 kg) veal brisket
- 1/4 cup kosher salt
- 1/4 cup cracked black pepper
- 1/2 cup bourbon
- 1/2 cup ginger beer
- 1/4 cup honey
Instructions
- Mix bourbon, ginger beer and honey thoroughly. Marinate brisket with bourbon, ginger beer, and honey for at least 2 hours. Overnight if desired.
- Remove brisket and apply salt and pepper generously and evenly.
- Smoke at 225°F (107°C) for 9 hours or until internal temperature reaches 203°F (95°C).
- Use a water pan to keep the humidity level in your cookbox high.
