INGREDIENTS
  • 1 pound mussels
  • 1 pound shrimp
  • 12 ounces salmon – large chunks
  • 1 cup of rice
  • 1 lime
  • 1 fresh chili pepper
  • 1 tablespoon thyme
  • 3 bell peppers
  • 1 bunch asparagus
  • 2 tablespoons garlic
  • 1 large tomato
  • Peppercorns- roughly chopped
  • 1 cup peas
DIRECTIONS
  1. Dice peppers, tomato, and asparagus, discarding any trims. Mince garlic, thyme, and chili pepper. (Remove seeds to reduce spice level)
  2. Lightly saute peppers, tomato, peas, and asparagus with garlic, thyme, and chili pepper.  Add rice and seasoning before placing raw, cleaned seafood on top.
  3.  Add as much water as rice and bake uncovered at 350°F (177°C) for about 30 minutes or until rice is tender and all seafood has reached an internal temperature of 165°F (74°C).
