Blueberry Lemongrass French Toast

A refreshing way to start a grilling day. This grilled mimosa has the right sweetness and a hint of smoke without an overpowering citrus punch. The perfect Mom-osa for Mother’s Day.

INGREDIENTS

  • 3 slices brioche
  • 2 eggs
  • 50ml milk
  • 180g blueberries
  • 100 g white sugar
  • ½ stem of fresh lemongrass
  • Lemon juice (Half of lemon)
  • Canola oil
  • Icing sugar

DIRECTIONS

  1. Place the blueberries, white sugar, lemongrass stalk, and juice from half a lemon in a sauce pan, then heat on MEDIUM-LOW for 15-20 minutes.
  2. Cook until blueberries are broken down and sugar has completely dissolved.
  3. Remove from heat and pass through a strainer. Discard lemongrass and blueberry pulp.
  4. Preheat your grill to 400°F (204°C), then add the exact fit cast iron griddle to grill your French toast.
  5. Whisk together eggs and milk, season with a pinch of salt.
  6. Melt butter on the griddle surface before dipping brioche in egg mixture and place on the griddle.
  7. Don’t let the butter smoke but it needs to be hot enough to sizzle to prevent the egg from sticking.
  8. Cook for about two minutes on each side.
  9. Serve with blueberry lemongrass syrup on the side
  10. Dust French toast with icing sugar.
