Mexican Grilled Beef Ribs

Since the cooking time is short, you will want a smoking hot grill to get a good sear on your meat. This will be on repeat for your weekday meals! Feel free to double or even triple this recipe.

INGREDIENTS 

  • 10-12 pieces of Flank Cut Beef Short Ribs
  • 3 tbsp Maggi Seasoning
  • 2 tbsp Worcestershire Sauce
  • 1 Lime – Zested and Juiced
  • 2 Cloves of Garlic
  • 1 tsp Fresh Pepper
  • 1 tsp Sugar

Serve With

  • Tortillas
  • White Onion
  • Cilantro
  • Limes
  • Grilled Spring Onions
  • Rice and Beans

DIRECTIONS

  • In a bowl, mix all the ingredients except the beef ribs. Place the beef ribs into a double seal plastic bag and separate them all, so they are not touching. Pour ¾ of the marinade into the bag over the beef ribs and seal the bag, removing all the air from it. Allow this to marinate for a minimum of 1 hour, but overnight works well for this! (if marinating overnight, use half the amount of lime juice).
  • Remove the ribs from the bag and pat excess marinade off. Preheat your Broil King grill on high over 2 burners. Once the grill has heated for 5-6 min and it’s scorching, place the ribs and spring onions onto the grill and let these cook for 2-3 minutes to get a good sear and char on the Beef. Flip and repeat. Check the internal of the ribs, as you are shooting for roughly 130f internal. This will come fast, so keep an eye on them. Feel free to baste the ribs in the excess leftover marinade to increase the flavour and char too!
  • Once the beef ribs are cooked to your liking, remove them from the grill with the onions and allow them to rest for a couple of minutes.

You can eat these with a salad or rice and beans, chop up the beef rib meat and serve them as tacos with white onion, cilantro, charred spring onion and limes!Enjoy!Recipe by Saturday Night Test Kitchen
