Provencal Marinade

This is an old stand-by in our home for chicken or pork. Vary the flavours with different herbs…rosemary alone is wonderful.

INGREDIENTS

  • 1/4 cup dijon mustard
  • 2 cloves garlic, minced
  • 2 tbsp balsamic vinegar
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tbsp herbes de provence*
  • salt and pepper to taste

*a blend of thyme, rosemary, lavender, and summer savory available in specialty food shops and some supermarkets.

DIRECTIONS

  1. Combine all of the ingredients in a glass dish suitable for marinating.
