Smokey Bourbon Ribs

INGREDIENTS

  • 2 racks of side ribs
  • 50 ml soya sauce
  • 4 tablespoons olive oil
  • 2 tablespoons Worcestershire sauce
  • 60 ml (2 ounces) bourbon
  • 1 tablespoon garlic (minced)
  • Salt and pepper

DIRECTIONS

  1. Remove the membrane from ribs and clean them up. Try using the back end of a blunt spoon, they’re great for peeling membrane.
  2. Place the ribs in a resealable bag to marinate, you may need to cut them down from full rack size. Or marinate in a container.
  3. For the marinade, mix soya sauce, olive oil, Worcestershire sauce, bourbon, minced garlic, salt, and pepper.
  4. Pour marinade mixture onto the ribs and let marinate, refrigerated, for at least one hour.
  5. Remove from the marinade and place in a rib rack on the grill.
  6. Smoke at 225°F (107°C) for 2 to 3 hours.
