INGREDIENTS
- 2 racks of side ribs
- 50 ml soya sauce
- 4 tablespoons olive oil
- 2 tablespoons Worcestershire sauce
- 60 ml (2 ounces) bourbon
- 1 tablespoon garlic (minced)
- Salt and pepper
DIRECTIONS
- Remove the membrane from ribs and clean them up. Try using the back end of a blunt spoon, they’re great for peeling membrane.
- Place the ribs in a resealable bag to marinate, you may need to cut them down from full rack size. Or marinate in a container.
- For the marinade, mix soya sauce, olive oil, Worcestershire sauce, bourbon, minced garlic, salt, and pepper.
- Pour marinade mixture onto the ribs and let marinate, refrigerated, for at least one hour.
- Remove from the marinade and place in a rib rack on the grill.
- Smoke at 225°F (107°C) for 2 to 3 hours.
