Smoky Tortilla Chip Mac And Cheese

Elevate a childhood favorite with another childhood favorite by combining mac and cheese with Doritos! Enjoy it at both the kids table and the adults table at your holiday gathering.

INGREDIENTS

  • 500 ml of heavy cream
  • 1 tablespoon of butter
  • 2 tablespoons of flour
  • 200 g asiago cheese
  • 200 g old cheddar cheese
  • 200 g mozzarella cheese
  • 1 kg of dried macaroni
  • 1 bag of your favorite cheesy tortilla chips (hint: Doritos work well)
  • 1/4 cup (50 g) bread crumbs
  • Salt to taste

DIRECTIONS

  1. Preheat the grill on MEDIUM 350°F (177°C).
  2. Boil the pasta until al dente, remove and drain.
  3. Melt the butter in a pot, add the four, and brown over medium-low heat, stirring regularly.
  4. Once the flour is browned, whisk in the cream and bring it to a simmer.
  5. Add the cheese to the simmering cream and stir to melt evenly.
  6. Stir until blended completely. The sauce should be thick, stringy, and creamy.
  7. Salt the sauce until desired taste.
  8. Pour the macaroni into the casserole dish, pour the sauce over and mix it all together.
  9. Bake for 20 minutes on MEDIUM heat.
  10. Crumble the breadcrumbs and tortilla chips on top of the mac and cheese, then top with the cheese mix and some butter.
  11. Bake for an additional 10 minutes until the topping is golden brown.
  12. Serve and enjoy!
