Strawberry Shortcake

Shortcake is easy to bake on your gas grill, so no need to heat up your house in the summer for this dessert.

INGREDIENTS

  • 1 cup Sugar
  • 1/4 cup Butter, at room temperature
  • 1 Egg
  • 1 tsp Vanilla
  • 1 cup Milk, not quite full
  • 2 cups Unbleached flour
  • Pinch salt
  • 2 tsp Baking powder

STRAWBERRY TOPPING

  • 1 Quart strawberries, sliced
  • 3 tbsp Grand Marnier
  • 2 tbsp Sugar

CRÈME FRAÎCHE

  • 1 cup Whipping cream
  • 1/4 cup Sour cream
  • 1 tsp Vanilla
  • 1 tbsp Sugar

DIRECTIONS

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper. In a medium size bowl, beat together sugar and butter, add the egg and beat until light. Then add vanilla.
  2. In a small bowl, combine flour, salt and baking powder, and gradually add flour mixture to the egg mixture, alternately with milk. Turn this thick, light batter out onto baking sheet and form into a round shape.
  3. Bake about 25 minutes or until the colour of rice krispies.
  4. Meanwhile slice the strawberries and sprinkle them with the Grand Marnier and 2 tablespoons of sugar. Toss lightly.
  5. Just before serving, combine the whipping cream and sour cream in a medium bowl. Whip until soft peaks form, then add vanilla and 1 tbsp of sugar. Beat until just mixed.
  6. To Assemble: Slice cake in half and fill with half of crème fraîche and strawberries. Top with remaining crème fraîche and strawberries.
