INGREDIENTS
- 1 bone on pork side roast
- 2 lbs (1 kg) bacon
- 12 potatoes – cut into wedges
- 1 tablespoon chili sauce
- 2 tablespoon olive oil
- 2 tablespoon minced garlic
- 1 tablespoon minced rosemary
- 2 tablespoon soya sauce
- 2 tablespoon Kosher salt
- 1 tablespoon cracked black pepper
DIRECTIONS
- Mix olive oil, soya sauce, chili sauce, garlic, salt, and pepper. Coat pork side liberally.
- Wrap pork side in strips of bacon and place in the middle of a large grill topper roasting pan.
- Lay potato wedges with any extra bacon around pork roast where it will roast in the drippings.
- Season potatoes with salt and pepper.
- Roast at 350°F (177°C) for 1 hour or more, or until pork reaches an internal temperature of 160°F (74°C) next to the bone.
