INGREDIENTS
- 6 turkey legs
- 2 tablespoon thyme
- 1 tablespoon paprika
- 2 tablespoon Kosher salt
- 1 tablespoon pepper
- 25 ml olive oil
- 25 ml soya sauce
DIRECTIONS
- For the spice blend, mix together thyme, paprika, salt, and pepper.
- Oil the turkey legs then rub with the spice blend until well coated, season under the skin if possible too.
- Place turkey legs directly on the cooking grates and baste with a mix of olive oil and soy sauce.
- Smoke at 250°F (121°C) for 2 to 3 hours, basting at least every hour until cooked through.
- As with all poultry, the meat should temp at least 165°F (74°C) at the thickest part to ensure a servable doneness.
