Scrambled Eggs With Grilled Vegetables

This is a quick and healthy breakfast that can be prepared entirely on the griddle. Rich and savory grilled vegetables such as tomatoes or asparagus are a great side in the morning.

INGREDIENTS

  • 6 eggs
  • 50 ml cream
  • 12 cherry tomatoes
  • Parsley
  • Olive oil
  • Butter
  • Asparagus
  • Baguette – sliced
  • Arugula

DIRECTIONS

  1. In a bowl, whisk together eggs and cream.
  2. On a griddle, grill tomatoes and asparagus with olive oil, toast baguette slices with butter, and cook scrambled eggs.
  3. Serve with fresh arugula and parsley. Season eggs and vegetables to taste.
