INGREDIENTS
- 2 racks of beef short rib plates
- 1 bottle Broil King® Perfect Steak Spice
FOR THE SMOKE
- Broil King® Smoke Master’s Blend Pellets
DIRECTIONS
- Preheat your pellet grill on LOW 180°F (82°C) for a very low and slow smoke. While your grill preheats, rinse your ribs thoroughly with a mixture of vinegar and water. Remove the top membrane, on the bone side of the ribs, using paper towel. Season the ribs with Broil King® Perfect Steak Spice. If you intend to marinate them overnight, season lightly and wrap in cling wrap.
- Place the ribs bone side down on the cooking surface and let roast at 180°F(82°C) for 4 hours. After 4 hours turn the temperature up to 225°F (108°C) and let roast for an additional 4-6 hours until the internal meat temperature reaches 203°F (95°C). Always check the internal temperature in the thickest part of the meat without touching the bones.
- Let rest covered for 30-45 minutes before serving. Slice evenly between the bones.
