Smoked Beef Short Ribs

INGREDIENTS

  • 2 racks of beef short rib plates
  • 1 bottle Broil King® Perfect Steak Spice

FOR THE SMOKE

  • Broil King® Smoke Master’s Blend Pellets

DIRECTIONS

  1. Preheat your pellet grill on LOW 180°F (82°C) for a very low and slow smoke. While your grill preheats, rinse your ribs thoroughly with a mixture of vinegar and water. Remove the top membrane, on the bone side of the ribs, using paper towel. Season the ribs with Broil King® Perfect Steak Spice. If you intend to marinate them overnight, season lightly and wrap in cling wrap.
  2. Place the ribs bone side down on the cooking surface and let roast at 180°F(82°C) for 4 hours. After 4 hours turn the temperature up to 225°F (108°C) and let roast for an additional 4-6 hours until the internal meat temperature reaches 203°F (95°C). Always check the internal temperature in the thickest part of the meat without touching the bones.
  3. Let rest covered for 30-45 minutes before serving. Slice evenly between the bones.
