Spicy Carrot Salad

Although this is not a grilling recipe, it goes so well with grilled meats, we had to include it. This is a great make-ahead party dish as it keeps well in the refrigerator for 1 – 2 days.

INGREDIENTS

  • 1 lemon, freshly squeezed
  • 1 tbsp cider vinegar
  • 2 cloves garlic, minced
  • 1/4 tsp cayenne
  • 1/2 tsp ground caraway seed
  • 1/2 tsp ground cumin
  • sprig cilantro for garnish
  • 1 tbsp olive oil
  • 3 tbsp yogurt
  • 1 lb grated carrots
  • dash salt

DIRECTIONS

  1. Combine the lemon juice, vinegar, garlic, cayenne, caraway and cumin in a small glass mixing bowl. Whisk in olive oil and yogurt, and season with salt. Pour over grated carrots and toss to coat. Garnish with sprigs of cilantro.
