Apple Gin Fizz

A refreshingly crisp and fizzy drink fit for apple season! A concoction of gin, lemon juice, and agave nectar is shaken with ice, topped with sparkling apple cider, and garnished with fresh thyme and grilled apple slices. Enjoy with your autumn favourites like Grilled Carrots with Miso Tahini Dressing or Roasted Squash with Wild Rice Salad.

INGREDIENTS

  • ½ an apple, cored and sliced into ¼-inch thick slices
  • ice cubes
  • 2 oz. gin
  • 1 tbsp. lemon juice
  • 1 tsp. agave nectar
  • ~ 2 cups sparkling apple cider
  • a few sprigs of thyme, as garnish

DIRECTIONS

  1. Preheat your gas grill to medium-high heat (400-500°F). Very lightly oil the grids with Broil King’s Basting Brush.
  2. Grill apple slices for about 2 minutes per side, until nicely charred but not cooked all the way through. Transfer grilled apple slices to a cutting board and set aside. Cut a notch at the bottom of 2 slices so they can rest on the rim of a glass.
  3. Fill a cocktail shaker with ice. Add agave nectar, lemon juice, and gin. Shake and pour into 2 individual glasses. Place a thyme sprig in each glass and garnish with grilled apple slices. Finish with about 1 cup of sparkling apple cider per drink. Enjoy with grilled apple slices on the side.
