Charred Broccoli Salad

INGREDIENTS

    • 4 heads of broccoli flower
    • 1 pound (500 g) bacon
    • 1 cup (250 g) shredded cheddar cheese
    • 1/3 cup (75 g) dried cranberries
    • 1/4 cup (50 g) slivered almonds
    • Broil King The Perfect Steak Spice Rub

FOR THE DRESSING

  • 1/2 cup (250 g) mayonnaise
  • 1/2 cup (250 g) sour cream
  • Splash of vinegar
  • 1/4 cup (50 g) of red onion, grated
  • A squeeze of lemon juice
  • Pinch of salt

DIRECTIONS

  1. Mix the dressing ingredients together in a bowl and set aside.
  2. Preheat the grill to 380F (193C) in preparation for the bacon.
  3. Once preheated, place a drip pan under the cooking grates and lay the bacon out on the grates above. Roast until crisp.
  4. Remove bacon and let cool.
  5. Cut the broccoli into small florets and toss them in some olive oil and Broil King The Perfect Steak Spice Rub.
  6. Roast in a Broil King roasting basket directly on the cooking grates for 20-30 minutes until lightly charred.
  7. Remove from heat and toss with the remaining salad ingredients and the dressing.
  8. Serve and enjoy!

Pro-tip: you can swap out the cranberries and the almonds for any nut, seed or dried fruit to tailor this recipe to the season.
