We love this fresh and healthy grilled salad! Charred peppers make the base, and it’s topped with creamy feta, oil and balsamic. Enjoy it as a light lunch, or pair it with some grilled chicken.
INGREDIENTS
- 4 bell peppers
- 50g of feta cheese
- Extra virgin olive oil
- Balsamic vinegar
- Italian seasoning blend or fresh basil/microgreens
DIRECTIONS
- Take your whole bell peppers and char them over direct heat on medium-high.
- Place them in a bag or a sealed container and allow them to steam for 20 minutes.
- Remove them from the bag and peel off the skin. remove the pits and stems.
- Slice into quarters and lay on a plate.
- Crumble feta over the peppers. Drizzle with oil and balsamic vinegar. Dress with dried herbs or fresh basil/micro greens.
