Charred Pepper Salad

We love this fresh and healthy grilled salad! Charred peppers make the base, and it’s topped with creamy feta, oil and balsamic. Enjoy it as a light lunch, or pair it with some grilled chicken.

INGREDIENTS

  • 4 bell peppers
  • 50g of feta cheese
  • Extra virgin olive oil
  • Balsamic vinegar
  • Italian seasoning blend or fresh basil/microgreens

DIRECTIONS

  1. Take your whole bell peppers and char them over direct heat on medium-high.
  2. Place them in a bag or a sealed container and allow them to steam for 20 minutes.
  3. Remove them from the bag and peel off the skin. remove the pits and stems.
  4. Slice into quarters and lay on a plate.
  5. Crumble feta over the peppers. Drizzle with oil and balsamic vinegar. Dress with dried herbs or fresh basil/micro greens.
