A unique variation on a chicken parmesan using mozzarella instead. This baked chicken mozzarella is enhanced with just a touch of smoke.

  • 1 chicken breast
  • 50 grams mozzarella
  • 6 leaves fresh basil
  • 1 Roma tomato
  • 1 onion
  • 1 red pepper
  • Kosher salt
  • 1 tablespoon olive oil


  1. Filet chicken breast and place on sliced onions rings on foil-lined with parchment paper.
  2. Season chicken with salt and pepper and top with chopped tomato, basil, and mozzarella.
  3. Smoke at 350°F (177°C) for 30 minutes or until chicken reaches an internal temperature of 165°F (74°C).
