INGREDIENTS
- 2 lb raw or green peanuts in shell
- 2 chili peppers
- 3 jalapenos
- 1 lemon
- 3 cloves garlic
- 2 tablespoons fresh ginger
- White sugar to taste
- Salt to taste
DIRECTIONS
- Put a large pot of water to boil on the side burner. Make sure there is enough room to completely submerge the peanuts.
- Begin by seasoning the water. Water should be salty but not overwhelmingly so. Err on the side of caution as you can add more salt when the peanuts are done. Balance water with sugar if you like, but this is not required, depending on your personal taste.
- Mince garlic, ginger, and chili peppers roughly and add to liquid. Squeeze half of a lemon into the water before adding raw peanuts.
- Boil peanuts, covered, for 20-30 minutes or until peanuts are extremely tender.
- Finish with fresh diced jalapeno, and squeeze the other half of lemon over top before letting cool in the fridge.
