Pear And Blue Cheese Salad

Stilton blue cheese is the perfect cheese to serve cold and fresh over this salad. A mild goat cheese is a good alternative if you’re not a fan of the intensity of blue cheese.

INGREDIENTS

  • 2 pears (sliced)
  • 2 red pepper
  • 1 zucchini
  • 1 lemon
  • Olive oil
  • 100 g sundried tomatoes (sliced)
  • 150 g blue cheese or goats cheese
  • Pickles
  • Fresh greens

DIRECTIONS

  1. Preheat your grill on MEDIUM heat.
  2. Cut red pepper and zucchini into large chunks and roast at 350°F (177°C) for about 15 minutes until vegetables are tender but still firm.
  3. Let roasted vegetables cool in the refrigerator.
  4. Mix roasted vegetables with sliced pears, sun-dried tomatoes, olive oil, lemon juice, salt, and pepper.
  5. Garnish with your favorite pickles and cheese before serving.
