Pork Tenderloin With Apple Brandy

INGREDIENTS

    • 1 pork tenderloin
    • Broil King Perfect BBQ Spice Rub
    • 1 teaspoon cardamon
    • 1/2 teaspoon cinnamon
    • olive oil
    • Baguette – thin sliced and toasted
    • Parsley or sprouts to garnish

FOR THE SAUCE

  • 1/2 tablespoon Broil King® Perfect BBQ Spice Rub
  • 6 apples, Granny Smith or Courtland – rough chunks
  • 6 oz (180 ml) brandy
  • 1 cup butter
  • Salt
  • Brown sugar
  • Pepper

FOR THE SMOKE

  • Broil King® Smoke Master’s blend pellets

DIRECTIONS

Set your smoker to grill at 275°F (135°C). Add some butter to a cast iron pan on the grill surface and melt it completely. Caramelize the apples in the butter for up to 45 minutes or until brown and soft. Deglaze the pan with the brandy. Add the remainder of the butter slowly in small cubes, incorporate into the sauce. Season to taste, remove and set aside.

Turn your Broil King® Pellet grill up to 375°F (190°C) preheat the grill completely.

Season the pork tenderloin and grill directly for 15-20 or until the internal temperature reaches 145°F (63°C). Remove and thin-slice.

On the baguette toasts, assemble one slice of the pork tenderloin and a spoonful of the apple brandy sauce, garnish. ENJOY!
