We can’t think of many things that make us as happy as fresh lemons. It’s versatile, adding that bright burst of vibrant flavour to everything! This is hands down one of the recipes you will want to save and regularly make for the kids or company that’s coming over! Fire up the pellet grill, and let’s get baking!
INGREDIENTS
FOR THE LOAF
- ½ cup canola oil
- 1 ¼ cup sugar
- 2 tsp vanilla extract
- 2 eggs – room temp
- 4 tbsp fresh lemon juice
- Zest from a whole lemon
- 1 ½ cup flour
- 2 tsp baking powder
- 2 ½ tbsp poppy seeds
- ½ cup vanilla greek yogurt
- ¼ cup 2% milk
FOR THE ICING
- ½ cup icing sugar
- 2 tsp lemon juice
- 1 tsp 2% milk
DIRECTIONS
- Start by preheating the pellet grill to 350˚F (176˚C) and use Broil King Apple Wood Pellets for fuel.
- In a large bowl, add the oil, sugar, vanilla, eggs, lemon juice and zest. Mix well to incorporate the sugar with the liquids. Add the rest of the loaf ingredients to the bowl and stir. Try not to over mix, as this can lead to a very dense loaf. You want the ingredients to be incorporated, but lumps aren’t terrible.
- Using a Bread Loaf pan (9×5 pan), line it with Parchment or Baking Paper and directly pour in the batter. Give it a bounce or two off the counter to remove any bubbles and have the batter set into the paper. Place it into the heated pellet grill and close the lid. Try not to open the lid as the heat will escape, and the loaf will collapse. Set a timer for 60 min and leave it to bake.
- When the 60 minutes are up, take a toothpick and stick it into the center of the loaf. If it comes out clean, you are done. If it comes out wet, close the lid, give it another 10-15 minutes, and check again. When the loaf is ready, remove it from the grill and pull the loaf from the bread pan using the paper. Set it on a rack to cool completely.
- While the loaf is cooling, mix up the ingredients for the icing in a bowl. If it’s too thick, add a bit more milk. If it’s thin, add more icing sugar. You want it thick but runny enough to drizzle. Use your judgement. When the loaf is cooled, drizzle the icing over the loaf. Slice and serve!
