Roasted Ribs With Potatoes And Peppers

This quick and easy alternative to slow roasted ribs lets the flavor of the rib drippings enhance your roasted vegetables.

INGREDIENTS

  • 2 racks of side ribs
  • 1 teaspoon rosemary
  • 1 tablespoon garlic
  • 2 tablespoon chili sauce
  • 2 tablespoon olive oil
  • 3 bell peppers
  • 5 large potatoes
  • Salt and pepper

DIRECTIONS

  1. Marinate the pork ribs with garlic, rosemary, chili sauce, salt, pepper, and olive oil.
  2. Chop peppers and potatoes into large chunks and season with salt and pepper.
  3. Roast the ribs on the vegetables in a grilling wok or in a roasting pan at 350°F (177°C)
  4. Roast the ribs on top of the peppers and potato wedges for 1-2 hours or until pork reaches an internal temperature of 160°F (71°C).
  5. Brush pan with oil to prevent sticking.
