INGREDIENTS
- 1 duck breasts with the fat cap on
- 2 tablespoons Broil King® KC BBQ Spice Rub
FOR THE SMOKE
- Broil King® Smoke Master’s Blend Pellets
DIRECTIONS
- Hit the ROAST button on your Broil King pellet grill and let it preheat to 350°F (177°C). MEDIUM-LOW for a gas grill. Place a cast griddle or cast skillet on the grill to preheat.
- Pat dry the duck breasts then score the fat with a sharp knife in a crosshatch pattern, this will help the fat render and give you a better Maillard reaction.
- Place the duck breasts fat down in the skillet and allow them to roast for several minutes, move occasionally to prevent sticking and burning. The fat should lose a great deal of its mass and turn a beautiful golden brown within 15-20 minutes.
- Once golden coat the duck breasts heavily in duck fat then remove the duck breasts and season them with the KC BBQ Spice Rub thoroughly.
- Place the duck breasts on the cooking grates and roast until the internal temperature has reached 135°F (57°C). Remove and serve
