SMOKED DUCK BREAST

Crisp buttery duck fat tops this perfectly roasted duck breast. The sweet aspects of the Perfect KC BBQ spice rub accents the duck perfectly.

INGREDIENTS

  • 1 duck breasts with the fat cap on
  • 2 tablespoons Broil King® KC BBQ Spice Rub

FOR THE SMOKE

  • Broil King® Smoke Master’s Blend Pellets

DIRECTIONS

  1. Hit the ROAST button on your Broil King pellet grill and let it preheat to 350°F (177°C). MEDIUM-LOW for a gas grill. Place a cast griddle or cast skillet on the grill to preheat.
  2. Pat dry the duck breasts then score the fat with a sharp knife in a crosshatch pattern, this will help the fat render and give you a better Maillard reaction.
  3. Place the duck breasts fat down in the skillet and allow them to roast for several minutes, move occasionally to prevent sticking and burning. The fat should lose a great deal of its mass and turn a beautiful golden brown within 15-20 minutes.
  4. Once golden coat the duck breasts heavily in duck fat then remove the duck breasts and season them with the KC BBQ Spice Rub thoroughly.
  5. Place the duck breasts on the cooking grates and roast until the internal temperature has reached 135°F (57°C). Remove and serve
