Smoked Pumpkin Seeds

If you’re already carving up pumpkins this Halloween this recipe is a must and extra easy to make. Provided your pumpkin seeds are dry roasted appropriately they can last weeks to months.

INGREDIENTS

FOR THE PERFECT SPICED

A great combination of sweet and savoury, think Southern BBQ seeds.

  • 2 cups of raw pumpkin seeds
  • ¼ cup butter
  • 1 tablespoon Broil King KC BBQ Spice Rub
  • 1 tablespoon maple syrup
  • 1 resealable bag
  • 1 rimmed baking sheet (parchment paper-lined)

FOR THE AUTUMN SPICED

Fall has a flavour with these spiced pumpkin seeds, simple and aromatic

  • 2 cups of raw pumpkin seeds
  • ¼ cup butter
  • 1 tablespoon cardamom
  • 1 tablespoon cinnamon
  • 1 tablespoon brown sugar
  • 1 tablespoon salt
  • 1 resealable bag
  • 1 rimmed baking sheet (parchment paper-lined)

FOR THE CURRY SPICED

A great variation on pumpkin seeds, curry goes well with pretty much anything.

  • 2 cups of raw pumpkin seeds
  • ¼ cup butter
  • 1 tablespoon red or yellow curry powder
  • 2 tablespoons honey – just apply as a drizzle after the seeds are laid out
  • 1 tablespoon salt
  • 1 resealable bag
  • 1 rimmed baking sheet (parchment paper-lined)

FOR THE SPICY SPICED

Throw in some heat to go along with these Southwest-style flavours.

  • 2 cups of raw pumpkin seeds
  • 1 teaspoon olive oil
  • 1 tablespoon Broil King BBQ Spice Rub
  • 1 teaspoon hot sauce
  • 1 resealable bag
  • 1 rimmed baking sheet (parchment paper-lined)

DIRECTIONS

  1. Light the Broil King® Keg and adjust the settings for a constant temperature of 275°F (135°C) or start your Broil King pellet grill and set it for the same temperature.
  2. Add the pumpkin seeds, oil, spice and hot sauce to the resealable bag, shake and pour out onto the baking sheet, place on the main cooking grid.
  3. Smoke at 275°F (135°C) for 20 minutes to absorb the subtle flavour of smoke that makes it just a little different.
  4. Remove, sauté the pumpkin seeds until golden brown.
