INGREDIENTS
- 1 filet of salmon
- 1 lemon
- 250 ml orange juice
- 250 ml cream
- 4 tablespoons grainy mustard
- Cherry tomatoes
- Sprouts
- Salt and pepper
DIRECTIONS
- Coat the salmon with lemon juice, grainy mustard, and salt.
- Place filet on parchment and foil and smoke at 350°F (177°C) for 30 to 45 minutes.
- Put cherry tomatoes on the smoker for the last 15 minutes.
- Mix 250 ml heavy cream with 2 tablespoons of grainy Dijon mustard, and 250 ml orange juice in a pot. Heat on medium until ingredients are incorporated and sauce begins to thicken.
- Season sauce with salt and pepper and pour over individual salmon portions. Garnish with sprouts and smoked cherry tomatoes.
