Smoked Salmon With Dijon Cream Sauce

This recipe works well with many types of flavorful fish. Try using trout or sole for something completely different.

INGREDIENTS

  • 1 filet of salmon
  • 1 lemon
  • 250 ml orange juice
  • 250 ml cream
  • 4 tablespoons grainy mustard
  • Cherry tomatoes
  • Sprouts
  • Salt and pepper

DIRECTIONS

  1. Coat the salmon with lemon juice, grainy mustard, and salt.
  2. Place filet on parchment and foil and smoke at 350°F (177°C) for 30 to 45 minutes.
  3. Put cherry tomatoes on the smoker for the last 15 minutes.
  4. Mix 250 ml heavy cream with 2 tablespoons of grainy Dijon mustard, and 250 ml orange juice in a pot. Heat on medium until ingredients are incorporated and sauce begins to thicken.
  5. Season sauce with salt and pepper and pour over individual salmon portions. Garnish with sprouts and smoked cherry tomatoes.
