INGREDIENTS
- Sweet potato
- Avocado
- Coriander
- Tomatoes
- Corn
- Green onions
- Limes
- Broil King BBQ Spice Rub
- Corn tortillas
- Honey
- Salt and pepper
DIRECTIONS
- Wrap the sweet potatoes in aluminum foil and place on pellet smoker at 350°F (177°C) for 30 to 45 minutes or until potatoes are fully cooked.
- Carefully open foil and cut open top of sweet potato. Season with Broil King BBQ spice and place open potatoes back on smoker and smoke for another 30 minutes.
- For the salsa, dice tomatoes and thinly slice green onions. Place corn in a cast iron pan to brown or if using corn on the cob, place peeled corn directly on BBQ grids.
- In a bowl, mix together tomatoes, green onions, corn, and diced coriander and season with lime juice, honey, salt, and pepper. To add more heat to your salsa, try adding raw Jalapenos or Habaneros depending on your spice tolerance.
- Grill corn tortillas and place in a tortilla warmer or cover with a bowl to soften.
- To assemble, start with smoked sweet potato mixture, top with slice avocado, salsa, and more fresh coriander.
