Smoked Tahini Sauce

Use this smoked Tahini as a dip or as a spread with a number of main dishes and apps.

INGREDIENTS

  • 250 ml tahini paste
  • 1 head garlic
  • 1 lemon
  • 500 ml vegetable oil
  • Salt
  • Roasted sesame seeds (optional)
  • Fresh parsley (optional)

DIRECTIONS

  1. Mix a few tablespoons of water into tahini paste before placing it on the smoker. This water will replace the liquid that will be lost during smoking. Spread the paste on a baking sheet for best results and smoke at 225°F (107°C) for about an hour.
  2. Wrap a head of garlic in aluminum foil and roast on your Broil King Pellet smoker at the same time. Tip, use the left side where the airflow is strongest. When finished, place in a bowl and refrigerate.
  3. Put tahini into a food processor with juice from half a lemon. Slowly add vegetable oil, allowing it to emulsify. Finish with salt and roasted garlic to taste and more lemon juice if necessary. Tahini has a naturally bitter taste, but when enough salt and lemon juice is added it should balance nicely. (You can also use water for a more traditional tahini sauce, but vegetable oil will make it richer.)
  4. Top with sesame seeds or fresh parsley.
