Whole Smoked Fish

This one’s a cottage country favourite; easy and yummy. Of course it’s even tastier when you catch the fish yourself!

INGREDIENTS

  • Filets of pike – or whole white fish

RUB

  • 1/3 cup brown sugar
  • 1/3 cup chopped dill
  • Zest of 1 lemon
  • 2 tablespoons salt
  • 2 tablespoons freshly cracked black pepper

MOP

  • 1/2 cup cider vinegar
  • 1/2 cup canola

DIRECTIONS

  1. Set Keg at 225°F (107°C), and scatter coals with soaked fruitwood chips or preheat your Broil King Pellet grill by pressing the SMOKE button. Place the fish on the grill and smoke for 1 1/2 – 2 hours.
