Sticky Blue Peaches

These grilled peaches perfectly complement breakfast or dessert. They’re a delectable combination of sweet and savory, and will work well with French toast, pancakes or days ending in Y.

INGREDIENTS

  • 6 fresh firm peaches
  • 1/4 cup of fresh maple syrup
  • 1 teaspoon cinnamon
  • 1 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 100 g (3.5 oz) blue cheese
  • 100 g (3.5 oz) fresh blueberries

DIRECTIONS

  1. Slice the peaches in half and remove the pit, the bowl shape of the peach is necessary for this recipe. Place the peaches in a locking resealable bag or container then add the maple syrup, nutmeg, lemon juice and cinnamon. Mix thoroughly. Marinade for at least 1 hour.
  2. Preheat your grill on HIGH, set your pellet grill to the GRILL setting 600F (316C). Brush grids generously with vegetable oil. Reduce heat to MEDIUM before grilling. Grill peaches for 5 minutes, face down then flip and baste with maple marinade. Roast until the peaches soften. Move to the warming rack baste and top with crumbled blue cheese. Roast until the cheese melts.
  3. Remove from heat, let cool slightly and top with fresh blueberries.
