Tandoori Tofu Kebabs

INGREDIENTS

  • 1 package firm or extra firm tofu
  • 1 eggplant
  • 1 red onion
  • 24 small sweet peppers
  • 2 tablespoons garam masala
  • 1 tablespoon curry spice
  • 2 tablespoons Broil King Perfect BBQ Spice Rub
  • 1 can coconut cream
  • 1-2 limes
  • Soy sauce to taste

DIRECTIONS

  1. Press tofu between two pieces of paper towel. Place some weight on top of tofu and let stand for 15 minutes to squeeze out any extra water. Use something that is heavy enough to press, but not crush the tofu, a large cookbook or textbook works well.
  2. For the sauce, begin to sauté diced red onion with garlic, and ginger. Once the garlic begins to brown add garam masala, curry spice, and Broil King BBQ spice. Cook-off spices for a few minutes before adding coconut cream, lime juice, and soy sauce.
  3. Cut tofu, eggplant, red onion, and sweet peppers into similar sized pieces and place on skewers.
  4. Once the sauce has cooled, marinate skewers for at least 2 hours, overnight is best, before grilling. As this is a light marinade feel free to leave it for up to 48 hours refrigerated.
  5. Cook skewers on high heat until sauce begins to caramelize. Ensure tofu has reached an internal temperature of 140°F (60°C) before serving. *Tofu should be handled the same as raw meat.
