ROTISSERIE STYLE BISON CROSS RIB ROAST

So, if you cant get Bison, that’s ok. You can sub Beef in for this. Essentially, you want to find a nice roast to cook evenly over the Rotisserie and something with big flavors. It doesn’t have to be low and slow when you slice it up thin. That meat, when cooked right and sliced right, is tender as anything else! Let’s get rolling! (See what I did there….)

Serves: 6-8

INGREDIENTS

  • 4lbs Bison or Beef Cross Rib Roast – Trimmed and cleaned up. Truss to hold its shape
  • 5 tbsp of your Favorite BBQ Rub
  • 3 tbsp Yellow Mustard
  • Salt and Pepper
  • 1 cup of water inside a disposable drip tray

If making into Sandwiches Per Person:

  • 1 Larger Hamburger Style Bun
  • 1-2 slices Provolone or Melty Nutty Cheese
  • 4 tbsp Caramelized Onion
  • 2 tbsp Mayo
  • 3-4 tbsp of your Favorite BBQ Sauce

DIRECTIONS

  1. Remove the grates from your Broil King Pellet Grill and set up for the Rotisserie. Preheat your grill to 350°f (117°C) and allow to come to temp. Prep your roast with the Rub and Stick on to the post, securing it with the forks on either end. Once grill is to temp, set the rotisserie into to place and turn on the motor. Allow to cook, untouched for 1 ½ hours.
  2. Once this time has elapsed, using a temp probe, you will be looking for roughly 125°f (52°C). If you have hit that temp, turn the motor off and remove from the post. If not, allow for more cooking time.
  3. Once the Roast has been removed, allow to rest under foil for 30-40 min.
  4. Once rested, remove the strings and slice VERY thin against the grain for sandwiches, or slightly thicker for a classic dinner plate.
  5. If making sandwiches, use whatever toppings you wish. I have listed my favorites for this one.
