Broken Down Turkey

Grilling a whole turkey is cumbersome and inefficient: the turkey ribcage is big and hollow and the parts are different sized. What a waste! Save some space and time by breaking down the turkey and cooking the pieces to the perfect doneness without overcooking them.

INGREDIENTS

  • 1 whole turkey or whole turkey broken-down
  • Broil King KC BBQ Spice Rub
  • 1 cup (250 g) melted butter
  • Fresh thyme

DIRECTIONS

  1. Preheat the grill on MEDIUM 350°F (177°C).
  2. Breaking down a raw turkey yields more meat than carving a cooked turkey. Take your time and follow the natural separation points between the breast and rib cage and the thighs and breast.
  3. Once broken down, slather the turkey pieces with some butter and heavily season with Broil King KC BBQ Spice Rub.
  4. As the breast meat is most likely to dry out, we need to add some moisture. Mix the remaining butter, thyme, and some spice rub together in a bowl, then use the Broil King Marinade Injector to add the butter mixture directly into the breasts.
  5. Once everything is seasoned, place it in the Broil King roasting basket and lock the lid. For large birds, you may need multiple baskets or you can roast the turkey directly on the cooking grates and warming rack.
  6. Throughout the cook, baste the turkey 2 to 3 times with more of the butter mixture.
  7. Remove from the heat once the internal temperature has reached 170°F (77°C).
  8. Your overall cook time may vary depending on the size of the bird.
