Comfort Food On The Grill – Taking Your Favourite Fall Dishes Outdoors

If you think the end of summer marked the end of grilling season, think again! Fall is a glorious season for grilling. For one, you’re not sweltering under the summer sun. More than that, it’s a great time to experiment with your grill to bake, roast, and slow cook some of your favourite fall comfort foods.

Gas Grills Are Versatile

When you hear “low and slow” it’s normal to think of charcoal grills and smoking meat for hours on end. But gas grills are incredibly versatile and can do more than just sear food hot and fast.

In fact, when you keep the lid of your gas grill closed – just like your oven door when baking – the grill can better maintain its internal temperature, which ultimately means it’s using less gas and cooking more efficiently.

Additionally, gas grills have the added advantage of precise temperature control. With the turn of a knob, and with a reliable grill thermometer, you can maintain the low and slow temperature needed to roast large cuts of meat to tender, fall-off-the-bone deliciousness.

Finally, it’s time to throw out the notion that low and slow on the grill also means smoked. What we love most about smoked foods is that they’re slow foods. If you don’t add a smoker box to your gas grill, you’re not going to get smoke flavour, but you will get tender and juicy, fall-off-the bone results.

So what’s cooking this fall?

Roasted Meats

Large, tougher cuts of meat are ideal for cooking low and slow. Pork shoulder, beef brisket, rib and porchetta are all better when cooked at a low temperature over a longer period of time.

Grilled Casseroles

While that might have an odd ring to it, YES, you can absolutely grill your favourite casseroles! Again, the key is simply to maintain a consistent temperature, and as with baking indoors, try to keep the grill lid closed.

What casseroles do we love on the grill? Sweet potato, broccoli, tuna noodle, you name it! While you can certainly take your favourite fall casserole recipes outside, we love the idea of incorporating some grilled veggies into your casserole before baking, like with this recipe for Savoury Mashed Potato Casserole

Grilled Soups

Another odd sounding one, but why not?! Fall is the perfect season for a big pot of game day chilli or roasted butternut squash soup. And this is one time where you can really make your grill do double duty. For example, for chilli you can sear a whole chuck roast before cubing it up, and fresh tomatoes can be charred on the grill before being pureed into sauce. Adding the layer of grilled flavour before simmering your chilli (on the grill, of course!) gives this old favourite a delicious twist.
